How it goes together

    Step 1

    Combine the tomatoes, avocado, onion, black beans, black eyed peas, corn, capsicum, jalapeno and coriander in a large bowl. Toss well.

    Cutting everything to a similar small dice means each scoop on a chip carries a bit of each element rather than one dominant chunk. Draining the tinned beans and peas well keeps the tinned liquid out, which otherwise turns the whole bowl cloudy and dulls the flavour.

    Step 2

    In a separate bowl, whisk the olive oil, lime juice, red wine vinegar, sugar, salt, pepper and garlic powder together.

    Whisking the dressing separately lets the sugar and salt dissolve and the oil hang in the acid, so it coats evenly instead of the oil sliding off and the salt sitting in patches.

    Step 3

    Pour the dressing over the salad and toss well to coat everything.

    Step 4

    Keep refrigerated. Toss well again just before serving if making ahead.

    Time in the fridge lets the onion, jalapeno and dressing soak into the beans and corn. The dressing also separates and settles as it sits, so the final toss redistributes it and lifts the seasoning back through.
