How it goes together

    Step 1

    Fill a small bowl with ice water. Stir in about 1 teaspoon of red wine vinegar, then add the sliced onion. Leave to soak for 10 minutes.

    Soaking in vinegar water mellows the onion's raw bite.

    Step 2

    Put the tomato, cucumber, capsicum and olives in a large serving dish. Drain the onion and add it to the dish.

    Step 3

    Sprinkle the vegetables with 3/4 teaspoon of oregano and a pinch of salt. Add oil and vinegar to taste, then toss gently.

    Step 4

    Top the salad with slabs of feta and sprinkle with the remaining 3/4 teaspoon of oregano. Serve.
